Two year old Hard Cider (High Pressure)

I have a Corny Keg with about 5 gallons of cider that is two years old. I was making Hard Cider from Aldi’s good cider for a while and it was coming out extremely TART. so when ever I was taking the keg to a party I would back sweeten it with some more unfermented cider. Well, I forgot about...

    Starsan Caps $uck!

I love the product but the caps are the worst. Screw them down, not even all that tight, and they break. I would think this would be a SAFTY ISSUE. Both caps broke on my recent large bottle and so I stuck it in a ziplock bag for safety... Sure enough some where along the way the bag tipped...

Starch, I want to add starch

So I did this brew where I had horrible conversion... I had read that some Bretts would eat starch so off to my LHBS and I asked if they had a recommendation, they did and said the American Farm House Ale, White Labs I think... The guy said it was known to eat the inside of barrels so I...

So I know I missed my mash temp in a bad way and then had a diluted mash. I did not get great conversion... SO: I was thinking of experimenting and adding a yeast that would actually eat the starch and I understand Brett will do that. SO, Anyone know which strain of Brett would...

    Bottling a Belgian Triple

So does anyone know about how much Corn Sugar is to much for commercial beer bottles? I have a bunch and would like to us them for my Belgian Triple. Beersmith is telling me to use 5 oz of Corn Sugar to get (2.7) Volumes... This seems a bit low (in weight) for me as I thought about 5 OZ was...

    Beersmith and Triple Decoction Problem

I am doing my first triple decoction for a Berliner Weise and think I am having a problem. For my final decoction the amount of the Mash it wants me to pull is every last bit of the grain in the Mash Tun... or so it seems. From my reading I should only be pulling about a third (1/3) to...

    Mythology surrounding brewing.

Just musing but It seems there is a lot "mythology" surrounding brewing,: Hot Wort Aeration (not sure but the Germans don't seem to worry about it much and I don’t think I have had a problem with it.) Aeration (I just use a whisk) Using a Secondary (don’t do this anymore, it can...

    Conical Process Help needed.

So a few years ago I bought my self a Blichmann Ferminator for my birthday and I use it pretty frequently but have never had much success in draining the yeast out. Each time I have tried I seem to get more beer than yeast and panic and shut it down. So I just let it collect as if it was a...

    Is Mr. Malty “pessimistic”?

I have been brewing for a number of years and never have used a starter and frequently just use two of (whatever) for my 11 gallon batches. So two Wyeast, WhiteLab, or Dry Yeasts. If it is a higher gravity beer I toss in a third. Now I am trying to do "more better” and actually...

15 Gallon Corney Kegs --- Why?

I saw this link on Ebay today and it got me wondering. What were 10 and 15 gallon Corney Kegs made for? What industry? I ask because when I was a kid I remember the soda trucks driving adound with the 5 Gallon kegs delivering syrup but I have never seen a commercial use for the larger...

So if you are not using Corn what are you using?

I have a few Beer Pigs and about 20 Corneilus Kegs but have been considering getting rid of the Corneys and getting "real" beer kegs. I was wondering if some of you have moved on from Corneys and using 1/6s or something else. ME? I am tired for fighting with them,,, though that may change...

How do you cut Polycarbonate tubing

My sight-glasses on the Keggles are to tall. I snapped on off moving it, luck for me it was at the base so I was able to salvage it. I now have a jagged point on my sight glass on one Keggle and the other goes over the top. I want to "clean-up" on and shorten the other. I am...

    BRY-97 36 hours later...

So I made two (2) low gravity Summer Ales this weekend... one English and the other American... I used Notthingham on the English and BRY-97 on the American. Both of them I just cast on the top when it was 70 degrees (F) with no "hydration" and then put in in a room that is in the mid 60s...
