Hey just came across this. Looks awesome and wanna try it. Just wondering what you used for carbonation and how much. Looks like you have a nice big frothy head so wondering what you used and how many volumes of CO2.

I am thinking about upgrading my system and building a gravity system to go along with it. I am thinking about going to two 15 gallon kettles but continuing to use a cooler for my tun. My question is how big of a cooler do I need to upgrade to? Would a 60qt cooler work or would it need to be bigger?

2.4 oz of dextrose should get you around 2.4 volumes of CO2 for a 3 gal batch. Tripple style guidelines is 1.9-2.4.

I would go with the 2.5 oz if I was you. With a irish stout you want your volumes of CO2 to be around 1.6 - 2. With 2.5 oz of dextrose you should get about 1.8 volumes of CO2 in a 5 gal batch. If you add the whole 5 oz of dextrose you will get around 2.8 volumes which is out of the style guidelines.
