    Andean Breakfast Stout

The Peruvians won't like that you're adding Colombian coffee!

use of cocoa powder and need for secondary ferm

Quick question- currenlty brewing a chocolate porter. I added 6 oz of cocoa powder at flameout and then continued by normal brewing procedure. I'm at the point where the SG has stablised and would normally rack to a secondary fermenter. I've seen some threads about not doing this- keeping it in...

    How to add vanilla bean

I intend to add vanilla bean as part of my porter recipe- planning on picking some up at the local market, but how should I sanitize them before adding to the wort? I live in Peru so this is obviously a very critical step for me! Cheers

    Dry hopping

What's the shortest amount of time worth to dry hop? I have a few (4 days) before I want to bottle and was thinking of adding a few pellets to take it up a notch.... Will I get a noticeable hop impact for such a short period of time?

    new to all grain brewing

Just tried my first all grain recipe over the week. I think the majority of it went well (hopefully!). Stupid rookie question- i got in a bit of a time pinch. I had to compress the sparging time- down to about 20 min- and had read that it should usually take about double that. What would...

how long will grains stay fresh?

quick question- am getting ready to make a saison (all grain), however just found out that I have to head out of town tomorrow for about 2 weeks. The grains are already crushed and ready to go- in your experiences, how long will crushed grains remain fresh and able to be used? I've sealed them...

    Cidery taste

Thanks for the feedback- didn't realize the impacts of fermentation temps.... That's one area that I haven't really focussed on... No other way to remove from existing beer? Aeration after opening?

    Cidery taste

I've brewed a few recipes (a mixture of both extract and partial grain recipes) and in several I've discovered a somewhat cidery taste present- not sure what is causing this, as I've been pretty particular about sanitation, clarification, etc.. And it's not in consecutive batches (present in an...
