Just back from California (back to the UK)

Hi, I am from the UK and have just returned from a 3 week holiday in California (San Francisco and north coast). I was amazed by the beer, and sampled a great range. I am sure I will not be able to find such good beer in the UK, so I think I will attempt to brew some myself. The best I had...

    Spent Grain

Hi guys, I have done 3 AG recipes. After the mash, I check the spent grain - every time there has been lots of white particles (I'm guessing unconverted starch) in and around the husks, and my efficiency is pretty low - 60% -65%. I aksed my local HBS about the grind and he seemed to think...

    Clone recipe for "Ferrymans Gold"

Hi all, Brewer from the UK here. I was wondering if anyone had heard of the beer "Ferryman's gold" brewed by Loddon Brewery. I am trying to find an AG recipe for it. I think it is brewed using styrian but I do not know the grain bill. It is a golden(ish) beer. Thanks!

    Not-priming

Does anyone here not prime beer before bottling? I ruined a batch recently by over-priming; I will bottle again at the weekend and will not add anything to the beer. I think the beer will still be carbonated. Anyone got any thoughts on this?

    yeast in bottles

Hi, I bottled a batch 4 days ago. I checked a bottle up against the light and noticed some scum on top of the beer, is this the yeast floating on the top eating up the priming sugar - and will it sink to the bottom after a few weeks.

    Copper exposed on heating element

Hi, I was given a second hand 5 gallon electrim boiler. The heating element was very dirty (black and crusty) so I scrubbed it with a metal brillo pad. I think I did it too much as I have rubbed off some of the chrome plating and revealed some copper. My dad advised me not to use it as...

    Reducing final gravity

Hi, My porter started out at 1.048 and has stopped fermenting at 1.020. It seems a bit high - I read somewhere that giving the brew a gentle stir in the primary may rouse some yeast and lower the gravity a bit. Is this advisable? Or are there any other methods? Thanls

    experimenting with porter

Hi I just brewed 3 gallons of London porter. It was a partial mash - malt used was pale, cara, chocolate, black, roast barley. Fuggles hops too. I am using 3 1 gallon demi johns for the secondary. I want to experiment with each gallon. For one, I was going to prime with some chocolate -...

    Kit beer problem?

Hi, My girlfriends bro asked me to do a brew using a kit for him. He tried it once but it didn't work too well - it was very hazy, even after about 6 weeks in the barrel. It was the fourth time I had brewed, I'm onto partial mashing and think I understand the basics. Anyway, yesterday I...

    Party gyling

Has anyone heard of a technique called party gyling? I was talking to a guy from a large regional brewer in UK who mentioned it to me. I think it is a technique that gives rise to a family of beers by blending worts together. I think the copper is rinsed which gives a low gravity wort, this...

    Trub

Hi, I just did my first partial mash. For a 2 gallon batch, I did the folowing: Mashed 500g pale malt with 200g crystal malt for 1 hour added 1kg malt extract boiled with hop schedule for an hour topped up water to 2 gallons During the boil, I didn't see any protein come to the...

    Tasted first bottled brew

Hi, I tasted my first bottled brew last night and it was much better than I thought! It was extract + steeping. I used northern brewer for bittering, and cascade for aroma. I also dry hopped with cascade. It was only a 2 gallon batch, and I used 2 1-gallon demi-johns for conditioning...

    Partial mash

Hi, I'm doing a partial mash soon using some pale malt, I also have some crystal malt and amber extract. Shall I do the partial mash first, then steep the crystal malt and then adding the extract? Or should I steep the crystal first, let the water cool and then mash the pale malt, and...

    bottling question - mixing

I just bottled a batch. When a got to the bottom of the bottling bucket there was a little left over - I tasted it and it was very sweet. I used a priming solution, and whirlpooled the beer into the bucket to help mixing - but it can't have worked very well. I'm a little worried the last...

    Working in a brewery

I have a question for you guys, I hope it's not too controversial. Would you take a pay cut to work in a brewery? I.e. do you think the reduction in earnings would be worth all that experience - and to make a career out of it.

    Question about hop aroma

Hi, I was reading about how hops are produced and the text I was reading said that after picking, the cones are dried in a stream of hot air to remove some of the moisture. I was thinking that the aroma - i.e. essential oils are far more volatile than water - so how do they remain in the...

    Oak chips

I'm using some oak chips for an IPA. Does anyone know how I should sanitise them? I was thinking I should steam them for 10 minutes.

    Sugar in secondary

Has anyone added sugar to the secondary before? When I pitched my yeast the OG was not as high as I wanted, should have adjusted it then really! Also, I saw some calculations somewhere about working out how much extract or sugar you can add to achieve a certain increase in gravity. Does...

    Quite a low OG

Hi, Yesterday I did my first extract brew (also using crystal malt). When I measured the OG, it was about 0.008 short, I'm at 1.046, instead of 1.054. I have already pitched the yeast, but I was thinking today that I should add some sugar to take it up. Do you think I should leave it, and...
