first big beer... a few questions.

So i made a monster IIPA last month. BRY-97 (1pkg) The original brix read 22. Four and a half weeks later my brix reading is 8. WITH THE ADJUSTMENT for alcohol, it comes out to around 12%. upon tasting it comes off a bit too sweet. Is it normal for such large beers to taste that sweet early? the...

what are the best hops to pair with oak?

I was planning a honey-rye pale ale and wanted to add some bourbon soaked oak chips. I have never worked with oak before and would like to know the which kind of hops pair well with the wood. Also how to handle the chips before adding (quantity, soaking time, steaming?). Thanks for your help.

just made the best beer i have ever had...

Mosaic pale ale. Bar none the very best i have ever brewed. I have been at it awhile now and am a bit of a snob. So this, isnt easy to say. So amazing. Tropical nose with easy hop flavor. Bitterness is on par with an papst or Narragansett. (ok a touch more). PERFECT!!!. MUG AND SUCH. CHEERS

just found beer in co2 tank... help.

I found beer in my co2 tank and gas lines and assuming the regulator. I burst carbed for the first time. Set the regulator to 30 psi for 24 hrs then purged and dropped it to 10. Later that night i had no pressure and beer in all my gear. How did this happen? Is my tank, reg, and line screwed...

    Cold conditioning and co2

Ive read that warm conditioning is faster, but what benefits (beside clear beer) does cold conditioning bring to the table? Also, is it smart to do the low and slow force carb method while conditioning? Lastly, is conditioning just to clear beer or are there better results then just fining agents?

quick but not too quick carbonation

i have read about force carbing a good amount and understand the set it and forget it method of setting to serving pressure and waiting two weeks. i have also heard of the quick method of turning up to 30 psi and rolling the keg, yadda yadda yadda. I was wondering if there was an in between way...

    my hydrometer and refractometer disagree

I checked both with water and they both seem to be calibrated. My refractometer says ~12.5 - 13 and the hydro says 1.042 in 80° wort. Even with the temp adjustment its only 1.044. Thats a 5 to 7 point difference. Which should i trust?

I've never used mosaic hops and want to know what others have done with them. How many were used, when they were used and if they are a favorite. Cheers

Mosaic pale ale recipe. (feed back)

first off all malts are final because they are already mixed and crushed. Hop schedual advice and possible malt additions, mash temps, etc. are all very welcome. this is for five gallons. also have citra hops available if i need to bump the ibu's. im looking for a low ibu pale ale quaffer...

Thanks to all that helped me achieve this...

My very first homebrew draft! The citricot ipa. 7% IPA brewed with citra hops and apricot. Big citrus flavor with delicate, yet apparent apricot undertones. (Think more apricot then dfh aprihop but less then magic hat #9). Again so happy this came out so well. I owe it all to hbt!

Are bottles and good gauge for keg carbonation?

I carbed my keg naturally at the same time as i bottled. Same web based carbonation calculator and dme type for both. Can i assume the carbonation is the same in my keg as it is in my bottles? Sorry for such a stupid question. also what happens if I tap the keg, and its not ready yet? again I'm...

Beverage factory has the best prices but shipping across the country is expensive and will take forever. Where did you get yours? Any good deals? Was planning on drilling through the mini fridge door. Any problems?
