    That will be awesome, let me tell you. Unfortunately, we were told explicitly by the TTB that once we file for a license we cannot brew at our building. Since we're doing that next week... this is going to stay unsullied by wort for quite some time, sadly.

    Yes, this is an option, but one that requires significantly more time and money. If they take the recipe and brew it for you, you don't have to jump through any hoops. But then you also don't get as much control, as you've realized.
