    Fancey-ing Up Cherry Ale Recipe

Hi Everyone, I have a notion to brew a cherry ale for the fall/holiday season, and found a recipe that seems promising. It comes from Charlie Papizian's "Joy of Home Brewing." "Cherries in Snow" 5 gallon batch -- 8.5# Alexander's light malt extract syrup 1.5 oz Santiam hops...

    Holiday Ale Ingredient Suggestions

Hi Everyone, I made an oatmeal stout last winter (recipe below) which turned out fantastic. I'd like to brew it again, but give it a holiday twist. I have never brewed with strong holiday flavorings and have a few questions. (1. Will simply racking over a spice like cinnamon or ginger or...

    Bad seal on Bottles

@E Marquez -- I used the capper linked above. Not sure if that is called a wing capper? I did not use screw-top caps. @Hello -- I know they are not sealed because I have had a half dozen or so since I bottled two weeks ago and all but one was uncarbonated. I did add priming sugars because...

    Bad seal on Bottles

Hi Everyone, I recently bottled a batch of Brewer's Best English Bitter Ale, and the majority of bottles I have had were not fully sealed, so they are flat. I use one of the standard kit cappers -- like this http://mountainhomebrew.com/browseproducts/Bottle-Capper-Hand-Model.html And...

    Star San for Canning?

Yes thanks everyone! I will definitely go the boil route. I don't have that many cukes for this batch, so the process won't be too labor intensive.

    Star San for Canning?

Hi Everyone, Kind of a random question, but I am going to can some pickles this weekend, and rather than sanitize the jars and lids with boiling water I have thought to use star san like I would use to sanitize my brew equipment. Has anyone tried this, or have experience using starsan to...

    Long-fermenting, high ABV Christmas Beer

'Tis the season to think about Christmas beers, right? (Christmas in July is close enough!) I'd like to brew a small batch (1 or 2 gal) Christmas ale or porter that is high in ABV (10% or higher) that I can brew now and bottle some time around November or December. A few questions to ask...

What's the worst craft brew (commercial) you've had?

My worst, and couldn't finish beer, was Leinenkugel Berry Weiss. It tasted like Fruity Pebbles soaked in the mash. WAY too sweet and a fake berry flavor.

    Pumpkin Ale?

Ditto on using some pumpkin. I made a partial mash pumpkin ale recently and the pumpkin does add flavor. I used a teaspoon of spice at flameout and another 3/4 teaspooon in the fermentor after a week.

Framboise or Lambic and small batches

Hi guys, So, I've got two questions in one post! First, my girlfriend likes that I brew beer (yay!) and has asked me to brew a framboise or lambic for her. I'm not a huge fan of fruit beers, so I'd like to make a small batch (one or two gallons) Any recommendations for a good fram/lam...

What's the worst craft brew (commercial) you've had?

@Bad67z: really, you don't like the Mad Anthony? I live in Fort Wayne (where the brewery is located) and I thought it was good. Very hoppy, but good.

    Pumpkin Ale low gravity?

Thanks for the input guys. I'll be bottling tomorrow and I'll let you know how things turn out once I try my first beer.

    Pumpkin Ale low gravity?

@JLem I topped off with three extra gallons and maybe a half gallon worth of ice into the fermentor.

    Pumpkin Ale low gravity?

Also, I hastily wrote pitch temp at 45, but it could have been warmer. That was 45 on the fermometor on the side of my bucket.

    Pumpkin Ale low gravity?

@ BrewThruYou I did a 5 gallon batch and topped off in the fermentor.

    Pumpkin Ale low gravity?

Hi Everyone, I've got a general question about a pumpkin ale I have made (recipe below). I took a hydrometer reading three days after brew day (when fermentation started) and just two days ago, with a total ABV that is very low. First Hydro reading: 1.030 @ 78F Current hydro: 1.014...

Should I throw out my equipment?!?!?!

:D :D :D Thanks for the advice everyone! I don't think I will throw out the equipment, I have seen a few suggestions about what to clean with. OxyClean or iodine. I understand what iodine would do (sanitize, yes?), but what about Oxyclean how will that help?

Should I throw out my equipment?!?!?!

So. . . here's the situation: I have a basic brew setup with two plastic food grade buckets like this: http://youcanbrewit.com/product/deluxe-homebrew-beer-making-equipment-kit I live in an apartment and keep my kit in the laundry room when I am not brewing. Tonight I was washing laundry and...

Leaving it on the Yeast bed: advantages?

Just a question of curiosity. I have read recommendations about leaving your brew on the yeast bed beyond the customary two week fermentation. First question: Why? Does it add anything the the flavor of the brew? Second question: Will letting my current IPA (recipe here...
