    slow ferment

I'm making a dry mead that started pretty high (1.122) and has been fermenting at a slightly cool ambient temperature--the thermometer stuck to my fermenter has said about 65 degF. It's been in the bucket for just shy of two weeks and the gravity is still in the 1.060 range. Should i rack it to...

    2 questions 1 post

There is a high probability that I will be coming into some hop rizhomes in the near future. Unfortunately I live in a less than ideal climate (Tucson, AZ) and living situation (apartment) to grow. I'm looking for advice to deal with both problems, perhaps simultaneously. 1-- How will hops...

    An observation

Having now been homebrewing since June, and with 3 beers completed, one conditioning and another in the bucket, I had a lovely little observation tonight. I opened up my fridge and had two sixers (one LHBS kit IPA, one my recipe PM red) two remanent bottles of my first kit steam and some bottles...

overshot my saccharification--any way to save it?

while heating from a low temp sacch rest to a high temp (140degF to 158degF) i had some thermometer issues and evidently blew right past 158 and wound up somewhere near 170. killed the heat and added a little cool water to drive the temp back down. right now i'm at 160 with a now somewhat thin...

jealous of dollhouse/my first AG was not as expected

not an unmitigated disaster, mind you, just more problems than i'd want in a first AG. had a tough time making a yeast starter last night and couldn't figure out if i'd have sufficiently viable yeast to pitch (fingers crossed). i decided to go ahead and brew at about 8:30-9ish, got my gear...

    yeast (non-)starter

i made a starter last night hoping for a brew session this evening. i boiled about 3/4 cup of DME in 750ml of water for 20 minutes and pitched after cooling. there was some minor activity (small bubbles) but never a full blown kraeusen. should i hang on to this and just step up to a larger...

    brew software for linux

had beersmith for a while. didn't use it much since i've only been in this a few months but i figured i'd build up a database of recipes to work from. had my computer stolen a few weeks ago and made the leap to a linux (ubuntu) box. any recommendations on brewing software that is linux-friendly?

    oxidation

I wasn't sure if this belonged here or in general techniques, but it seems like a beginner's sort of problem. While racking from primary to secondary, my siphon hose seemed to slip on the racking cane, leading to some air entry and cavitation in the flow. This air space grew and the siphon...

first PM, AG in the foreseeable future

Tomorrow AM kicks off my first PM. Built a 5gal cooler roughly to FlyGuy's specs (great work and a super useful post) and all my goods at the LHBS tonight. So pumped for this--it'll be tough to sleep. Anyway, I wanted to say that all of the great advice on these boards makes it so easy to get...

    Qa/qc

I'm relatively new to brewing (my 4th brew is planned for this coming weekend) and I'm having some problems with quality control seemingly at the bottle level, esp with my most recent batch. It was a kit IPA with steeped grains that tasted good, if strong, when i took a sip before bottling...

    hey

i've been lurking for about a week now and figured it was time to come out in the open. i'm only two brews into this mess (one being consumed, one in fermenter) but it's already a ton of fun and i spend way too much time plotting and scheming for future brews. while i try dilligently to follow...

dme foam--probably just a rookie thing

my second batch is a kit IPA, calling for 6lbs of dme. i'm good at following instructions so i toss in the dme prior to boil and get a ton of whitish foam filling my pot. even my 30qt pot (may be new but i plan on more substantial boils ahead) could barely hold it down. i'm not really worried...
