    looking for a AG clone of Magic Hat Encore

    I did a partial mash. 5.5 lb wheat malt and .5 lb Cara Vienna 20l malt mashed @ 150-155 for 1 hour. I added 3.4 lbs of light DME. I BOILED 2 oz of Cascade 5.4% AA as a substitute for the Apollo. Oh was 1.060 Fg was 1.016. I dry hopped per the recipe here. Sent from my iPhone using Home Brew

    I've made it. My wife did a side-by-side blind taste test. She apologized and said that she preferred "this one." I said, "that's alright, that's the one I made." Encore is not what it used to be. They use Cascade now and it is not as good as it once was. Sent from my iPhone using Home Brew

    Back sweetening is adding sugar after fermentation is done in order to have a sweeter product. Search the forum for stovetop pasteurization. There are some good threads that are simple to follow.

    You should be fine. However, without preservatives your bottles could explode if someone took one home no knowing to keep it chilled.

    If you don't want to carbonate then you don't need to pasteurize. Read a thread on back sweetening and you'll know just want to do with this cider.

    Sorry for the late response. I've been without Internet for a while. I'd say as long as it is sanitary you can add it any time prior to secondary.

    Thoughts on that...... DON'T DO IT. I came up a little short when I brewed it. I added the proper amount of DME and ended up with a fine beer.

    Skeeter Pee - Starting with Dry Yeast

    I stir daily until it gets started, then with each addition. After the last bottle I stir, seal it up, and wait. No problems with sulfur. I use Premier Cuvée yeast.
