flame out hops don't need to go in the kettle. Put the flame outs in a separate bag, pull the other bag out at the end of the boil and throw the flame out bag in. then when you're done whirl pooling or cooling pull that bag out also and transfer your wort as normal.

If you don't want to waste the sample you could sanitize another small bottle or something and pour it in there, then you could use the same sample to take your next readings. I've never done it so it may not work but it may be worth a try.

I'd be interested in meeting up with some local brewers also, I'm in west valley and i brew all grain more often then not although i'm definately not a pro.

I'd say try vinegar, i use it to get hard water deposits off stuff pretty often.

another thing to try would be only boiling 1 or 2 pounds of the extract for the full boil time and adding the rest with like 5 minutes or so left in the boil. adjust your hops for a lower gravity because your utilization will be better at a lower gravity.
