    You're lucky you didn't put anymore than what u did of the sulfite, no way could you get a repitch going then. I'm just glad for ya that it worked and all seems well now. Keep us updated.

    Id just watch it for infection or oxidation, your co2 levels might be high enough I don't know w/o looking at it. Id venture to say your fine though if you properly sanitized.

    You can always stabilize at whatever FG you want so it doesnt completely dry it. 1118 is very aggressive and has a high abv%'tage

    It can be. You didn't give any gravity readings which are most amateurs mistakes so its hard to tell. But usually if the abv is not at the yeasts threshold then yes once you rack and aerate ( better to not on a racking) then the yeast can kick back up reaching for its abv threshold.

    It's a delicious mixture of Buckwheat and Fireweed honey with muscadine grapes and subtle spices that complement the honey. It came out as a semi-sweet mead and is unbelievably tasty. Going to make my first 50 gallon batch of it this march.

    Gravity readings are your indicator when to rack. You haven't provided any so its impossible to help. If you have them, check and if its on track for what you're aiming at then by all means rack when its at the right number. After letting it ferment out will be your first rack, second rack after...

    I think fatbloke has a point, maybe go simple and first see what flavors/body/aromas you get and then expand to other recipes.

    Longer aging requires a low ph and higher alcohol content for sustainability along with cold storage and limited light. Remember this has a long time for the flavors to mull together, therefore taste test a lot! Cheers!
