Ferment longer, or leave in bottles longer?

Last weekend (Saturday) I brewed up a couple batches, one IPA, and a Heffeweizen, both are fermenting at the moment. I should have started brewing a while back for a party I have coming up on October 13th, but procrastinated. Basically my beer will have 3 total weeks from starting fermentation...

    Under-carbed and Apple Taste

I have ordered 3 kits from Homebrewers.com and all of them have had this slight cider/apple taste, with very little carbonation. My first 2 batches were fermented in the garage, where it is pretty cool. My last batch was brewed upstairs, where the temps range from about 67-71. I currently...

    Dry Hop Residue or Infection

I dry hopped this IPA about 1 week ago and noticed this morning that there are some floaties on the surface. I'm thinking it's just the hop residue, but just thought I'd get some expert insight here. I plan on drinking it regardless :tank:

How to avoid the temptation of drinking 'young, green beer'.

I just cracked one tonight.....4 days in the bottle. It wasnt good, so I was kind of mad at myself for not being more patient.

    Dry Hopping in Carboy

I just dry hopped an IPA the other day, and I just put the pellets straight in the secondary.

Question concerning my dry hopping with pellets

I just dry hopped an IPA, it's been in the secondary for about 3 days and I have the same foam. If it's still around when I rack to the bottling bucket I think I'm just going to syphon it the best I can without worrying too much. I would imagine after a couple weeks the sediment would have all...

    Cracking my first homebrew!

Looks awesome, congrats. My first 2 batches had no head at all. I would pour them into the glass and there would be a tiny bit of foam, but within 30 seconds it was gone.

Bottling this afternoon, have a quick question

I'm planning on bottling a Honey Ale this afternoon that is currently in a secondary. I also have an IPA that is ready to be transfered to another secondary. Is it necesarry for me to wash and resanitize in between these two jobs. I was planning on syphoning the IPA into the secondary, then...

    Starsan issue

LOL, thanks. I use it mainly to hold the tubes in place, but I screwed up drilling my stopper, so the duct tape is on there too. :D

    Starsan issue

I just put a Honey Ale into a secondary and that had Star San bubbles on top for maybe 12 hours, not exactly sure of the time, but they are gone now. From what I've read on here, just relax, the bubbles are fine. This is the secondary as it looks today, but it wasnt much different than yours...

    It exploded.

I'm pretty new to brewing too, but after my first batch of Porter almost blew all over the kitchen I quickly switched over to a blow off tube for all my subsequent batches. At the moment I have a Honey Wheat in the secondary and a Lagunita's IPA clone in the primary. The IPA was going nuts a...
