    Citrus Kolsch help

    I did one a few years back (and it did amazing in a competition oddly enough) As mentioned above, (I used my usual Kolsch recipe) and added orange and lemon zest (some bitter and sweet) at about ten minutes from the end of the boil. I also switched my usual hops for all cascade. Great citrus...

    How seriously do you take homebrewing?

    I ask myself..."Who am I brewing this for?"...and the answer is usually...ME! Relax and enjoy the art. Anything can lose it's appeal if taken too seriously. Enjoy and Cheers!!!

    What are you drinking now?

    Currently in London for the holidays. Sampling every Belgian I can find (and they have a bunch!) If you're ever here hit Belgo. They have a great Belgian selection. Also try Brew Dog...a great selection as well. I check back later...when I find magic! ;)

    Batch Sparging: what's your setup like?

    My system has two five gallon coolers...one with false bottom and thermo well...the hot liquor tank with just a valve. My fly sparge arm is from NB. I love my little system. I get great beers, and that's all that counts!
