    That should work then. I also know how the "boss" can be. I brewed a wheat beer over the summer that gave off that funky fruity stank that those wheat Yeasts are know for. She wasn't happy.

    This might be a step in the right direction, but a circulator helps cool the beer down and helps produce a clearer, cleaner beer. Id also let you primary and secondary sit out in the cold (50 degrees) and below to allow the yeast and hops to drop out before kegging. This should help get that...

    I know it may be to late but let us know how this turns out. The willametee is a very interesting choice for this beer. You could just bulk up on the fuggle.

    What are you brewing? That makes a big difference as well. Why don't you mini mash with oat flakes.

    To get a better fermentation why don't you move the bucket upstairs where it is warmer. Mid 50's might not give you the production you want.

    I found the recipe to this beer in a clone recipe book. It looked like a great recipe and I had to give it a shot before I tried it, but at 18.99 a four pack it just seems like a lot of money to spend. Im tempted to pull the trigger more and more after each review I read.
