    Used too much sparge water and didn't boil off enough so ended up with closer to 6 gallons than 5 and OG is 1.084. Still to style but not the same as Westy 12.     It could completely mellow out but it could take many months. Just don't rush it and give it time. Good luck!

    I'd ignore the batch for a month and try it then to see if it mellows; if not, wait another month. For SURE I wouldn't cut it with anything! Give it time - it'll mellow eventually

    Sam Adams Octoberfest... One of the few non BMC beers the wife likes so I'm happy to have one with her.

    Hmm, I actually like that beer - maybe it was just skunked from sitting on the shelf too long. I think once it's uncorked you're screwed. Where are you in Iowa? I ask because I was in a local HyVee (Davenport) yesterday and saw someone pick one of those up. Don't see them go very often!

    Been on a Belgian kick lately; in fact I just ordered ingredients for a Quad that's in the recipe database. Anyway, just tried my first St Bernardus Abt 12 and WOW, that's one of the best beers I've ever had. Talk about the ultimate sipping beer.:mug: Waiting patiently for my 2 beers...

    One of my favorite beers, Honker's Ale, uses them exclusively. Love them.

    Good 'ole Honker's Ale from Goose Island. This is a beer that is SO much better on tap than in a bottle. All the hop freshness seems to disipate in the bottle and it turns it just into a "good" beer. On tap, or homebrewed it's excellent. Next beer on my list to brew!

    So who's brewing this weekend?

    Brewing a clone of a local beer: 483 Pale Ale from Great River. It's really more of an Amber but it's good and I'm having fun trying to see how close I can get.
