    Priming with maple syrup?

    So I've read a lot of the priming threads and am going to prime my Maple Porter with maple sugar. My question is: if I am using 3.5 oz of maple sugar for my 5 gallon batch, how much water should I use to boil it in prior to priming?

    I live in an old building in southern California, and we don't have AC. Does anyone have any tips for keeping my beer cool while fermenting? It's a little high now 75 F, but it will get really hot soon here.

    Dry hopping

    I made a DFH 90 min clone recently and I bought all my hops at once, so now when I open my refrigerator I am overwhelmed by the delicious aroma of the hops in there. They are sealed in plastic and all I was just wondering if there was any value in waiting until I rack to secondary to buy them...
