    100% Carapils brew???

Terry Foster in his book on Pale Ales says that Carapils can be used as a substitute for amber malt. I'm currently trying to use up all my current stock of grain so I found a 100% amber malt Pale Ale recipe from the Durden Park Beer Circle. Will I need an enzyme? I have full temp control during...

    Recommend a good kit??

I'm in Ireland where there is no HB scene and getting good brewing kit is fairly difficult. I want to step up to a kit that will last me for years, something built for purpose not hobbled together from other things also the £/$ ratio is very favourable at the mo so shipping ain't too much of a...

    Itsok Kolsch

Hi guys I'm doing brewing the Itsok Kolsch from The Joy of Homebrewing by Charlie Papazian. My conundum is that he calls for Perle Saaz and Tettnanger hops in the ingredient list but makes no mention of the Saaz in the step by step portion of the instructions. He states 'Add the alt extract...

    Fermenting or not??

I brewed the Sparrowhawk Porter from The Joy of Home Brewing (Charlie Papazian) last Tuesday and totally forgot to take a gravity reading:o . There was no visible fermentation for three days, no krausen or bubbling in the airlock,no sediment, nothing. Ambient temperature was 64F. Yeast was...

Substituting roast barley for toasted malt

I'm about to start brewing 'No Sham Shamrock Ale' from The Complete Homebrewers Guide (Papazian). The recipe calls for 225g of toasted malt barley a description I found to be quite vague and so for better or worse I bought roasted malt instead. I am new to this game but I have the feeling the...

    Irish Red Ale

Hi I got some Dark Oak Ale going in the secondary at the moment and am about to start an Irish Red Ale. The kit says to add 1-1.5kg of sugar but I want to substitute with dry malt extract. Should I use a light or dark dme. I imagine a light would be more appropriate but just thought I would...

    Fermentation stopped

Hi My fermentation stopped after only 36 hours, is this normal? Temps are 20C +/- 2C. Should I just take a gravity reading today and another tomorrow to see if things have stopped? I just can't believe it could possibly be ready already. Its a "Dark Oak Ale" with dry yeast...

Yeast and hop suggestions for Dark Oak ale

Hi folks This is my very first homebrew and I am going to use Sherwoods Dark Oak Ale kit. However the kit includes a dry yeast sachet and a 18g bag of hop pellets neither of which I am too keen to use. Can anyone suggest an appropriate liquid yeast and fresh hops that I could use instead or...

    Brewing equipment in Europe

Could someone point me in the direction of a quality online HB store with an extensive stock list in Europe preferably Britain. I'm in Ireland but I know there is nowhere here so Britain is the next best bet to keep the shipping costs down. I'm looking for somewhere that will sell wort chillers...
