    How long in secondary?

I have a pale ale with papaya in secondary right now. The OG was 0.045 and the gravity when I racked was 0.01. There's about 8 lbs. of papaya in the carboy with it. Should I just wait till it clears a little, or should I wait extra time for the fruit flavours?

    A Beer Miracle!

I had bottled two beers, a Coffee Porter and Elbro Nerkte Brown on the same night. I made a huge mistake by not sanitizing the priming sugar beforehand, and while the first few bottles were great, they started to become incredibly sour and, quite frankly, undrinkable. I decided that they were...

    Papaya Pale Ale Help

So I've made my own recipe (with some help from my LHBS) for a Papaya Pale Ale. The recipe is: 7lbs Pale Malt Extract 1/2lb Crystal Malt 1/4lb Wheat 3/4oz Centennial Hops Danstar Nottingham Yeast Papayas I'm planning on using the hops only for boil and racking onto the papaya in...

No airlock for my gallon jug

I tried my hand at making some hard cider tonight in a one gallon jug. I used apple juice, 1 lb corn sugar, and various spices and pasteruized it at 180 for about 20 minutes. When I went to put my airlock on, I found out that the bung I had been told to buy at my LHBS was too big. I just put...

    Papaya Beer

Hey everybody. . . I want to brew a beer with papaya added during the last few minutes of the boil. Can anyone tell me a good recipe to add this to? I was thinking about a pale ale, but anything that would taste better is welcomed. My LHBS has a great grain selection, and i'm going to do an...

    Beer Boycott

I just finished watching the documentary, "Beer Wars." Being a young, idealistic college student (full of homebrew, mind you) I've decided to boycott all big three beers and subsidiaries. Who else is with me? As I'm in Canada, the problem is not as large here, but still formidable. Let's...

Cooper's Bitter kits with too much acetaldehyde

I've brewed two kits of cooper's bitter in my Mr. Beer kit (i've moved on the a 5gal carboy, but I use the Mr. Beer for small batches), and each time, they came out with way too much acetaldehyde (by the way, never drink too much of that stuff. I can't remember one night when I had a few). I...

Goat's Scrotum from Joy of Homebrewing

I think that I'm going to attempt Papazian's Goat's Scrotum from The Complete Joy of Homebrewing. Anyone brewed it before? Any tips? I'm thinking about using ginger, licorice and molasses.

Mr. Beer kit came out sour. . .

I made my first brew from a Mr. Beer it (I have two other beers fermenting now), and it was the west coast pale ale. I added ginger to it to spice it up. It actually came out a little sour, but as I like sour beer, I enjoy the taste. Any idea why it would come out sour?

    Empty beer bottles?

Does anyone know where to get empty beer bottles when you're first starting out? I've saved all of my empties from last semester, but I only have about 6 gallons of bottle space (between all the different bottle sizes), and about 2 gallons of those are filled and conditioning. Help, I don't...

No foam 24 hrs after pitching, strong smell

Hi, this is my first attempt at a 5gal kit. I brewed a Black Rock IPA HME kit and added hops during boiling. My wort had a nice foam going about 12 hours after going in the fermenter and was developing kraeusen, but after 24 hours, has no foam whatsoever and has a very strong smell (it stings...

    Hello from Vancouver, BC

Hi, all. I started brewing after my friends showed me their setup. I got a Mr. Beer kit for christmas, but bought a real kit right after my first batch (it wasn't very exciting). I'm brewing an IPA dry hopped with Cascade (I was hoping to recreated that citrusy scent of Sierra Nevada Pale...
