    60 minutes vs shorter boils.

I've seen several recipes that call for 60 minute boils but the first hop addition is at 45 minutes. What's the point then of the first 15 minutes?

To reuse yeast cake or not?

I'm brewing a Russian Imperial Stout and I'm about to bottle Edworts Haus Pale Ale. Should I re use my nottingham yeast cake or go with the original plan of using 2 packets of Safeale us-05? If I do re use, should I use the exact same bucket and all, including all the smootz on the sides...

Attenuation Rates? How quick to reach FG?

I've got a IIPA that has been underway fermenting for 2 weeks. I pitched a 1800ml starter of WL001. It seems to have slowed to nearly a crawl at 1.020 and may have stopped all together. How long should I give it before I consider pitching more yeast or something? More 001, or something...

    Bootleggers Knuckle Sandwich

I recently had a pint of Knuckle Sandwich (IIPA) on tap at Beachwood BBQ in Seal Beach. It was possibly the best beer I've had in a year. For the life of me I can't find much of anything on a recipe much less their hops or IBUs. Does anybody have any ideas or have an idea? If you've got...

Batch #1 in the pint glass!

After 5 long weeks I popped open batch #1, a pale ale kit from the LHBS. Its quite nice. It could afford another week or so to carb out so I'll be patient on the rest. It also has no head at all. None! I'll work on that in the future. I thought I had screwed it all up but I'm glad...

My stir plate works but throws the bar

I've put together a stir plate but if I turn it up too fast it throws the bar. I used a 3/4" of PVC as a standoff for the magnets and then glued the magnets to the top of that. I think my stir bar is 1 1/2" or so. Do I need to get a smaller stir bar so it will bit in between the magnets? Do...

    Split fridge into a fermetor/kegorator?

Has anybody converted a side by side fridge into half fermenting chamber and half kegorator? Seems it might be possible. A couple kegs could stand on end in the freezer and the fridge side of the business could be the fermentor holding a few buckets of beer. I guess it'd require two...

    Temperature Variations/spikes during fermenting

I've only done a handful of batches but I've not found a great way to regulate temperature. At first my garage was staying very cool but we had several hot days last week and that killed it. I've got 2 still fermenting, a Russian Imperial Stout and a Pale Ale. For the most part they have...

Secondaries, dry hopping and reaching Final Gravity

I've got my second batch, an IPA that seems to have stalled a bit. I dry hopped it after one week, and now I'm at week two and think it'd be good to let it sit a bit longer to let it ferment. So here are my questions: Should I just leave it in the primary? Or should I transfer it into...

Gravity samples and dry fermenting-contamination concerns?

What are you all doing to take gra city samples? Just pouring it out the spout, measuring then dumping or do you return it? Also, for gry hopping do you just crack the lid and dump it in? I'm just wondering how concerned I need to be about contaminating the wort by opening the lid...

    New from Long Beach Ca

I've been lurking for quite a while now and doing lots of reading. I participate in several other forums for other disiplins and learn a lot from them as I do here. Tonight I made my first attempt at my own brew. I got a starter kit from Stein Fillers here in Long Beach (4 blocks from...

I just joined up this evening and have spent my day studying and learning about the brewing process. I hope to learn a lot and start brewing my own soon! Cody
