    substituting summit for warrior

I brewed a DFH 90 min clone yesterday that was supposed to use amarillo, simcoe and warrior hops. Unfortunately, Brewmasters Warehouse shipped me summit hops instead of warrior. I brewed it anyway, using the summit early in the boil hoping I wouldn't get too much of the summit flavor. I guess my...

    Bottle temp. vs. secondary temp.

My first batch has been in the secondary for 2 weeks at ~70° in my fermentation chiller. I want to bottle it now but it's about 82° in the house. Is it ok to bottle condition at that temperature? Should I bring the secondary temperature up before I bottle? I'm just afraid of making bottle bombs.

How bad did I screw up?

This is my first attempt at this. I'm brewing from a kit, an IPA from True Brew. Here's what I've screwed up so far. 1. I covered the pot during the boil. I don't remember reading anything about that in The Joy of Home Brewing but I did read that it's bad at howtobrew.com(after the fact, of...

    Hey everyone

Hi, Great forum, I'm glad I found it. I'm working on my first brew right now. My wife gave me a kit for my Birthday. How cool is she?!! I also roast my own coffee and I made my own maple syrup when I lived in Vermont (now in Phoenix). I guess making my own beer was inevitable. Thomas
