    Hibiscus mead recipe?

Howdy, I've been wanting to make 1 gallon of hibiscus mead 1st time. Can't find much online but figured I'd use: 3 lbs of buckwheat honey, 1 oz of hibiscus, Nottinghams ale yeast, yeast nutrient, 1/4oz tartaric acid, 1/2 malic acid, and 2 tbsp of strong black tea (for tannin). Do I dissolve...

    Acerglyn ratio?

Wanted to make a simple acerglyn 1 gallon for the first time. What is a good honey to maple syrup ratio? I usually use 3 to 4 pounds of honey for show meads. Would clover honey be best to allow the maple flavor to not be overwhelmed? Any advice would be greatly appreciated.

My 2nd batch is plain but with 4 pounds of raw unfiltered honey from texas (Very strong) still brewing. I want...

Off taste in 1st cider batch

Tried cider after successful wine and mead batches (though very dry). after 2 weeks of fermenting 1 gallon of Apple cider with 2 cups of natural sugar, 2 small cinnamon sticks, 1 tsp yeast nutrient and EC 1118 lalvin yeast, the airlock stopped producing bubbles. I let it sit for 4 days and...
