Just thought i would post my experience.
First cider ever.
5 gallon fresh cider from mill
3 lb light brown sugar
Champain yeast, dry.
Brought juice up to 180 F for 30 min
Mix in sugar.
Cool to 65 F
Pitch rehydrated yeast
Ferment 21 days
Bottle 5 oz corn sugar
Est 11% ABV...
