    Should I worry?

Hi Folks, I was cleaning up after bottling my latest attempt at beer, and I noticed that the clear plastic tubing used for siphoning the beer to the bottling bucket, and for the filling of the bottles had dirty patches inside if them. Clearly they were not clean. Two question: 1. I ran...

    Secondary Fermentation

Hello Folks, My Brewer's Best directions says to do a Secondary Fermentation. Should I do it? Does it matter? Does anyone do a Secondary Fermentation any more? Your thoughts. Thanks Bart

    UV light

Hi Folks, Turned on the basement overhead florescent lights today for about 6 hours. I totally forgot about the 5 gallon white plastic fermenting bucket that was in the room, full of 10 day old fermenting Kolsch. Normally the basement is dark which is why the fermenting bucket was there. Here...

    Fast ferment

Hi Folks, Making a Kolsch. I pitched the yeast at 2pm Saturday. Then 24 hours later the vapor lock was furious with bubbles. Now, Tuesday 5:11pm and there is no bubbling at all. It's only been a little over 72 hours since I pitched the yeast? Could the fermenting cycle be done this fast? I...

8 beers short of two cases.

Hi Folks, I did what the instructions recommended. On my fermentation bucket the wort was filled to 5 gallons. When I went to prime and bottle the brew I came up 8 beers short of two cases. Is this normal? And if I want to avoid this in the future can I simply add more water to the wort to...

    Effect on a Kolsch

Hi Folks, What is the effect on a Kolsch if 5 ounces of priming sugar is used instead of the instructed 4.5 ounces? Assuming of course that it doesn't cause the bottle to rupture. Will it be foamier, or sweeter, or creamier? Or will it make no difference? Thanks Bart

    How close to disaster?

Hi Folks, Just completed my third brew and I have three questions. (1) I've used a Brewer's Best kit for all three beers. The bottle day directions state to mix in 4.5 ounces of priming sugar. The sugar comes in 5 oz packets. I just realized that the last two brews had all 5 ozs mixed in...

    What are the signs?

Howdy Folks, I have an IPA that I've decided to do a second fermentation on. I want to catch it at the perfect moment. It is day 6 since I pitched the yeast. The bubbling has now slowed down. It's at about a bubble every 15 seconds. At what bubble rate should I perform the procedure? Thanks Bart

    Specific Gravity questions

Hi Folks, Three questions: 1. Adding water lowers specific gravity, in other words causes the hydrometer to float lower, correct? 2. My brew kit wanted an OG of 1.061 to 1.065. It read 1.060. Is the beer ruined. 3. At OG 1.060 the actual amount of brew is a tad less than 4.5...

    Kolsch OG Question

Howdy, Just brewed my second batch of Kolsch. The directions state that I should have had an OG of or about 1.042 - 1.046. Instead, I had an OG of 1.034 when I put it away to ferment. What does that mean? Will the end product taste bad? Will the alcohol content be low? Thanks Bart
