All I want to do is brew...

I have malt in the basement, hops in the freezer, and yeast in the fridge. But I also have... A full-time job, three kids 6 & under, a 7-month pregnant SWMBO, an old house that always needs something, and a honey-do list that grows longer faster than it grows shorter. And where does...

    Beer temp & priming...

Please help me know how to answer this priming calculator - it wants to know the temp of the beer. My porter's first two weeks of fermentation were 65-67F. Then, after FG stabilized, I put it in the basement where it is ~57F. It will have been there for a week by the time I bottle it this...

    the Perfect Pint blog

Is this blog still active? It belongs to @bierhaus15 on HBT, right? I love this blog, it has tons of great info, and I've brewed a number of the recipes with great results. I hope Will keeps posting!

    Molasses: when to add?

Next on the brew schedule is an Old Ale with an OG of 1.084 and an FG of 1.023. The recipe (half batch) calls for 6oz of molasses added to the boil - but I just read that Jamil recommends (in this month's BYO) adding simple sugars near the end of fermentation. What do you all think? What...

    Too cold to carb?

I just bottle an American Brown and a RIS yesterday. But my basement is 55F - is this too cold to get proper carbonation? SWMBO is kicking my beer out of the upstairs broom closet...

    Water profile when cold-steeping

Going to brew a RIS in the next few days. I would add some chalk to my mash to up my Calcium and bicarbonates, but I'm going to try cold-steeping the dark grains and adding them straight to the primary before pitching. My water is low in Ca and HCO3, but I'll only be mashing the lighter...

    How fine is too fine?

I've done 3 AG (half)batches so far -all BIAB- but I haven't been getting very good efficiency. Here's my process: Mash 5-6 pounds in 2 gallons at 150-154 for 60 mins. Let drip. Dunk the bag in 2 gallons at 170 for 10 minutes. Let drip. Combine. Boil 60 minutes, yada yada yada, I get 2.5...

Fixing my gravity - a little help?

Not sure what on earth happened last night, but my projected OG of 1.060 ended up at 1.041  But that will be a different post... Right now, I wanna fix it. I pitched at midnight last night, and woke up thinking that if I add some LME I can bring up my OG to where it should be...

    Porter feels thin

Hi all! Long-time reader, first-time poster. So my second AG batch was a simple porter: 2.5 Gallon SG: 1.045 3.25 # MO 1.75 # brown malt Fuggles at 60 and 15 FG: 1.010 It has been in the bottle for about 6 weeks, and while the flavor has really come together nicely, the beer feels...
