Can I use regular sugar to carbonate my beer in the bottle, opposed to corn suger. Or can i use corn syrup, if so what proportion of water to syrup for 6gal of beer?

In a couple of days, my first batch will have been fermenting for 2 weeks. How do I know when it is done? I am fermenting in a 6gal pail, so I can not see the wort to see what it looks like If anyone can help -- let me know
