    When to bottle?

    I added some sodium metabisulfite to one gallon of cider and added some Apple juice concentrate to sweeten it. Now it has a nasty sulfur smell/taste to it from the sodium metabisulfite. If/when the sulfur dies down, when can I bottle it? Did I ruin it?

    I've got one gallon of apple cider going now, and 5 gallons of Ed Wort's Apfelwein fermenting. The next batch is going to be 5 gallons, but I ask, what are your opinions? What I want: -Between 5-7% abv -Relatively sweet -Carbonated or not, no preference. I have only had what I have...
