    Difference between brewing a lager and an ale?

    just order a few more Cooper's canned hopped kits, one of them is a lager, what do i have to do different, and do I realy have to ferment below 55 degrees, my garage is at 65 degrees or so right know...will it still make good beer at those temps?

    Rack at what gravity

    Started with 1.052, gravity of the apple juice, added 4 cups table sugar, 4 cups of brown sugar got a reading of 1.074, fermented for 10 days bubbles slowed to every 12 seconds, took a reading of 1.054. Racked to secondary as well as adding campden tabs, was this to soon to rack, it is still...
