    45 min mash

    It would take 96 brew days to save 24 hours of my time by mashing for 45 minutes instead of 60. That's roughly 10 years of brewing for me. I don't see the point. Like others have said, there are other ways to save time without potentially negatively impacting the final product.

    First time which kegerator to get?

    I would go with the ArcticKing from Walmart. I would not want to lift a 1/2 barrel keg into a keezer so scratch that idea. If you do decide to homebrew, you can fit 2-3 5 gallon corny kegs in that kegerator.

    S-23 Lager Yeast Educate Me

    S-23 is great. I've pitched as warm as 80 under pressure. 54 without pressure. Flocculates well. I've had crystal clear beer with it 9 days after brew day with no finings.

    You probably didn't add enough water. And if you ever do measure the SG (accurately) and it's higher than expected you can add more water to get the expected SG. 5.25 - 5.5 gallons of wort in the fermenter will probably yield 5g in the keg.

    I was going to say if your Kolsch is tasting good with a FG of 1.030 then it's probably not at 1.030

    I've been very happy with my Green Mountain Grill Daniel Boone. Especially, for the price point. You can crank it all the way to 550 in 5 degree increments. Although I never have.

    It's basically a summer time solution for me to be able to chill to 80 or so and pressure ferment. When the ground water allows me to do so, I'll chill down to lager pitching temps and do it 'the right way'.

    Lactic acid tastes like the leftover sour stuff from an empty bag of sour patch kids.. Gives you a nice little pucker if you get some on your hand and lick it
