Well, I had good ambitions, but with work, the economy (which means more work), and the new born, I've not been able to do anything with this. In fact I haven't had time to brew in 4 months. :\

I have it recored. LOVE F1! Unfortunately I know the ending, but I'll still watch it. It's hard to read auto blogs and not have some blog post an image if the finish. /sigh

    Brettanomyces, Pellicles, & Oak Barrels

Really? So you want oxygen? Could you also just add a foam stopper instead of an airlock? At this point this batch is entirely for experimentation, I prefer it end up something desirable, as the SWMABO would prefer it. ;)

Really? I read the opposite, that StarSan would kill brett but Iodophor would not. So I'm confused. The only thing I've seen as a reference is that the Wikipedia page says that Sulphur Dioxide (S02) is known to kill it, but that is a gas, so not sure how you would use it. I've been really...

    Post your infection

Here is my Winter warmer that I aged in an oak barrel for a week. Two days after racking to secondary I had this. Brettanomyces picked up from the barrel and under the microscope at 400x I have another thread about it, but it seems to fit this thread too. Just goes to show, not all...

    Brettanomyces, Pellicles, & Oak Barrels

OK at lunch I got some better pics (see origional post) and got a 25ml sample to try. Smell is normal, alcohol (it is near 9% after all), oak, special spices, wintery, a hint of sourish-ness but not harsh. Overall, nothing taste or smells out of whack, pretty much like I expected it to taste...

    Brettanomyces, Pellicles, & Oak Barrels

As noted in this previous thread (Oak Barrel - 20L) I acquired an oak barrel to age half of my Winter Warmer ale this year to give it that Extra Special Reserve kind of a kick. Well it appears, using the oak barrel, I got more than I bargained for! Brett Pellicle? This year I did a 10...

    Yeast cultivation, getting started

I'm doing something very similar but using sterile water storage. Sterile Distilled Water Yeast Storage You can find autoclavable vials here pretty cheap (along with everything else lab wise). http://www.cynmar.com/SearchByKeyword.aspx?word=autoclavable

Those are just a wort (Water, DME, and a little yeast nutrient). I was using those to capture samples from bottles. Basically I added 15ml of wort to each tube, and then inoculated them with the dregs off the bottom of a bottle of craft beer using a inoculating loop. After a couple of days...

    Oak cube re-use

I second the use of Potassium metabisulfite. Thats what I use to sanitize and keep my oak barrel hydrated in between beers (1/4 tsp per 5gallons water, or 1tsp per 500ml water as a sanitizer you can spray and wipe). I've even used it to kill an infection on an aging/maturing beer. But you have...

Held the camera lens up to the eye piece and turned off the flash. Works pretty good.

It's been a lot of fun so far. I do have a Gram stain kit coming and some more glassware and plastic ware. It should be here tomorrow. Last night I finished setting up the other half of my brew closet set up as a lab. So now I have a permanent place to work from. I still have the samples from...

Pretty much the same reason. I grew tired of spending $7 each batch for yeast. Plus the fun factor of having something else to manage in my brewing process. Some have asked about links to good information. Here are a few I've collected. Brewers Laboratory Handbook - Great resource on how...

No scientific method really just a guess since it's most common in brewing, but I guess it could be anything. I'll be able to better identify them using the Gram stain kit I ordered.

Good beer gone wrong! Dregs of the infected Brown ale. Note bacteria to right of pointer. Fullers ESB yeast? SN PA yeast, or was it Fliechmans? They looked alike... So anyway, I guess the point is to "Reduce" your risks, IMO I don't think you can ever brew without bacteria (the **** is...

I find myself always looking at ways to enjoy different aspects of brewing as a hobby. Recently I started getting into yeast ranching and harvesting my own yeast and creating banks. The cost of equipment may not be really justifiable, but as I found there is a whole new side of the hobby to...

Thanks for all the feedback! WOW! It's been a while since I checked this thread. Well, a small update. I started the basic app, I have a few screens laid out and started on the database code and had some things come up (my wife is about to give birth in the next day or so). So I hope to get...
