    Awesome! Thank you again for the tips! Do you happen to know hat your water profile is. That is something I need to figure out before I brew this. I use Bru n' Water and build from RO. Do you step mash with the Floor Malter Pils? I've read that stuff is less modified.

    Mt Hood 2016 Crop

    I bought a pound of 2016 Mt Hood from Yakima Valley Hops before I read that they don't do well for long storage. I think the number I read is that they retain 50-60% of their AA after 6mos. The AA is something like 5%. Should I adjust this when building my recipe?

    NE Pale Ale Recipe Critique

    Yes, it is .5 oz. I'm really kinda shooting for something lower gravity than an IPA. Right now I'm mashing in a 5 gallon cooler, so 5 gallons of a bigger IPA is not feasible. But I would like to get close following APA numbers. When i have a bigger tun, I will definitely go bigger.

    I agree. I would like to use 1318, but I chose 04 for 2 reasons. First, I would like to brew this tomorrow and don't have time for a starter. Second, my LHBS only carries White Labs so I'd have to order 1318 online.

    Carafa is strictly for color. Just trying to meet the style guidelines. Why, I don't know, won't be in any competitions.

    5 Gallon Batch OG 1.054 SRM 12.7 ABV 5.7% IBU 25.6 I don't want to use any Caramel malts, and am shooting for something that is fairly dry and crisp with a good balance of malt with slightly noticeable bitterness.

    I've been doing a little more research, and I might just try 90% Red X with 10% Flaked Rye. And I am possibly leaning toward Chinook. I've also got a batch in the fermenter now with San Diego Super Yeast. I may wash that and use it on this. Thoughts?
