suggestions for small beer to brew

If you'd like something oriented more to the American APA/IPA style try Gordon Strong's Session IPL from Modern Homebrew Recipes. I've done it as an ale with Cascade and S-05. 3.8% but you could adjust it downward.

Fuller's Water Profile: 200 Sulphate, Zero Chloride?

Certain things in the US brewing community get repeated and become articles of faith, rather than reason. Don't even get me started on the LODO (low dissolved O2) advocates.

English Ales - What's your favorite recipe?

Many of the newer British hop varieties, e.g. Jester, Olicana, Harlequin, are pursuing those "American" flavor notes. While not for traditional bitters, very many brewers are using those and American hops in cask beer. The story of beer in Britain is one of constant evolution.

Fuller's Water Profile: 200 Sulphate, Zero Chloride?

I've used the Murphy profiles with success. I've never been able to get the SO4 and Cl levels as high as thet suggest so I settle for getting as high as possible while keeping the ratio between the 2 as close as the Murphy ratios

English Ales - What's your favorite recipe?

Oakham Ales Citra has been around for years. Believe it was the first ale in Britain with 100% Citra hops and 2019 Champion Beer in Golden Ales.

What BIAB brewing actually is (Mythbusting for traditionalists)

If we are rethinking procedures and listening to other brewers, then there really are no "first principles". I prefer to listen to other accomplished and award winning brewers as who have different opinions on things like sparging and exactitude of mash temperature. That's not indifference or a...

What BIAB brewing actually is (Mythbusting for traditionalists)

Advising use of "first principles" is nice, but what constitutes "first principles"? What some consider foundational others consider mythology. That what most of this discussion concerns. Each individual should draw their own conclusions. Perhaps best not to assume that because someone comes to...

What BIAB brewing actually is (Mythbusting for traditionalists)

    1. Some of the most rigorous process control is in macro breweries that make some of the most uninteresting beer, IMO. 2. People make great beer while doing step mashes and decoction mashes that are the antithesis of holding mash temps to such a precise degree of .1F. 3. Mash temp is but...

What BIAB brewing actually is (Mythbusting for traditionalists)

The post to which I responded was suggesting temp control at .1 degree, not 1 degree. Yes I can recirculate and get readings in several spots that confirm I am within 1 degree my temp and I, like you, can do that regularly. But what I - and you - can't eliminate is the possibility that hot and...

What BIAB brewing actually is (Mythbusting for traditionalists)

I am not convinced that such a high degree of temperature control is possible, much less necessary. Unless you are going to have multiple sensors at different locations in the mash bed, how can you ensure the temp is constant throughout the mash?
