    Stepped it up once and now if I put an air lock on it for a while it starts bubbling. Very surprised it's alive after over a year in the back of the ice box. Looks like I brew tomorrow.

    That's what I was thinking. I use a stir plate. Not sure how to judge viability after starter is started - take a gravity reading?

    After four years our two cascade plants are finally taking off. Used three ounces at flame out last week for a pork roast pale ale. Stuff smells great.

    Was never good with numbers. Yes, thousandths, the really small, tiny ones like in spark plug gaps. I crushed grain with a rolling pin once and it was one of my best beers by the way. Not trying to start trouble.......

    I think you'll be fine. I left a kolsch in secondary for a while in a keg and when I transferred it to the serving keg for the final leg, it tasted just like it should. You're way ahead of me on your octoberfest. I just transferred out of primary this week. Pretty tasty so far.

    Tried a lot of different configurations and I think I have the correct set. Problem is that the unit is not accurately registering the correct temperature. The unit shows 168 degrees. Trust me, my house is not that hot. I'll recheck settings but I'm thinking Johnson let me down with this one.'

    Many thanks for the response. The unit seems to work if I reverse the cut-out. Unfortunately, then it will turn my fridge off when it gets above the fermentation temp instead of on. I will continue to fiddle.
