    Primary in Whiskey Barrel

Really just shooting for a sour beer that we can evolve over some years in that barrel without babysitting it too much. Probably mess around with doing blends from the barrel-aged beer. We'll just have to give it a shot and see how it comes out. Thanks for the help! :rockin:

    Primary in Whiskey Barrel

I was planning on racking the sour beer we already made and dumping the bugs from that beer into the barrel to innoculate the fresh wort in the barrel. We used WLP655 for that one. Should I add more Lactobacillus and Pediococcus to the barrel? I was just planning on using some fresh...

    Primary in Whiskey Barrel

Hello brewers! :mug: I'll try to keep this as brief as possible. I'm in the military and go home to Maine for Christmas each year. Last year I got my brother into brewing and we made a batch of flemmish sour which we planned on drinking this year. Our plan was to brew a new batch each...

    120 minute IPA problem

Excellent! Fermentation was definitely in full swing when I added the first bunch of sugar. I have it split between 2 fermenters and added 5 lbs to each in the morning, then again in the evening. I'm going to add the small incrimental additions beginning today along with the dry hops. Very...

    120 minute IPA problem

That's actually exactly what I'm doing. It's bubbling away like a beast and seems happy right now.

    120 minute IPA problem

My bad, I should have added that it was a 15 gallon batch.

    120 minute IPA problem

You are supposed to add in incrementally, but also during the boil which I forgot to do.

    120 minute IPA problem

I brewed this yesterday as the 1st part of a parti gyle brew along with an oatmeal stout. The recepie calls for 20 lbs of corn sugar during the boil... Which I found safe and sound in the box this morning. Too many beers I guess. I'm going to just add the sugar to the primary.. Anyone think...

    No choice.. Melomel on fruit

Thanks, I'll probably just find time to get it off the fruit and into a carboy for the year. Thanks!

    No choice.. Melomel on fruit

I just racked a batch of strawberry melomel and got word that I'll be deploying...again. Is it okay to bulk age mead on the fruit for a year-ish? I don't have much choice on what happens to it next, just trying to guess what my post deployment drink will taste like.

About to deploy for a year

Thanks for all the suggestions! My date got pushed back a couple months so I'll be able to get everything bottled before I go... I should have a nice stockpile of aged booze upon my return. I'll probably do a barleywine, that IPA, a mead and an apfelwein. Should hold me over for a good bit...

About to deploy for a year

No I was going to secondary it before leaving. Would that be fine? Dutch101st... just taking a stab in the dark but were you in the 101st Airborne? Best unit I've ever been in. I deployed with them during the initial invasion into Iraq. I'm thinking right now that a barleywine, a stout...

About to deploy for a year

I drink alot of beers but going dry for the year is my plan... I'm not risking the past 11 yrs in for a drink. I was planning on just leaving them in my glass carboys and making sure someone keeps an eye on them.. anything wrong with that? I haven't made any mead yet and will probably try one...

About to deploy for a year

I'm not sure that taking the hobby with me would be such a good idea. A guy got busted on my first trip over there with some booze and got busted way down... they tried to court martial him. On the other hand.. they were nice enough to let us have 3 beers in Ireland on our way back... I got...

About to deploy for a year

I've been brewing for a little less than a year now and am completely hooked. I'm in the Army and about to deploy for about a year and want to start a few batches before I leave. I'm not setup for all grain so will be brewing 4 batches of... something. I know I'm going to do a barleywine...
