Bottled 11 gallons/3 batches of cider, didn't add campden tablets - what to expect?

Bingo bango, green caps in Starsan solution. Thanks for the reassurance everyone! I may crack open a few over the next few weeks to see how things are going but it's good to know I most likely didn't ruin anything.

Bottled 11 gallons/3 batches of cider, didn't add campden tablets - what to expect?

Last weekend we bottled about 11 gallons of cider - the first 3 of out of the 4 batches I've made. Batch #1 was made with fresh pressed cider from a local orchard, #2 from organic apple juice and #3 from a 75/25 blend of organic apple and organic pear juice. All were fermented to dryness and I...

    Yeast stopping?

I'd recommend a glass hydrometer, as Yooper said they're only about $5-6 at your local home brew store. Glass is easier to sanitize as any scratches in plastic could harbor bacteria. Also, the hydrometers at your local HBS will be calibrated/scaled in a way that makes sense for...

How many packs of yeast for high-gravity cider?

No dishwasher :/ I do rinse the bottles I plan to reuse well as soon as they're emptied, but still feel the need to wash, then drip dry, then sanitize before bottling. I do/did. I think it's just due to the shape and the stoppers being wet with Star-San solution when installed. After a...

How many packs of yeast for high-gravity cider?

Excellent, thanks for the reassurance! And sure thing! Would it be frowned upon to start a "journal" so to speak? I don't see anything like that in the last few pages of this subforum... On the automotive forums I'm active on, I have a Build Thread that documents events, activities, and...

How many packs of yeast for high-gravity cider?

Exactly what I was hoping would be the case! Thanks :mug:

How many packs of yeast for high-gravity cider?

Hi HBT! I started two new fermentations on 3/5/2017, a 1-gallon apple/pear cider (75%/25%, respectively), and a 6-gallon high-gravity cider. My question pertains to the latter. I started the perry (can I call it perry when it's only 25% pear juice?) first and rehydrated a 5g pack of Red...

Is my cider going through MLF, and if so, can I bottle it?

I'm at a pretty steady 64-65* in the basement. I did as Yooper and Mayler suggested and racked to another carboy to see if any new sediment drops. Gravity measured about .998 - up from .996 when I transferred it to secondary - but the 32 oz of must I added on 1/1/2017 measured at 1.048. There...

Is my cider going through MLF, and if so, can I bottle it?

Temperature has been consistent but I can't say the same for the barometric pressure (no baraometer but the weather outside has been swinging). These bubbles/trails started a week or so after racking and haven't changed though. I'm not sure what the gravity is right now, it was .996 when I...

Is my cider going through MLF, and if so, can I bottle it?

I started my first batch of cider in Early November 2016 and racked it to secondary on Jan 1, 2017 with a measured gravity of .996. I did add a little bit of apple juice to take up some head space but it's been left alone since. It's appearance today is basically the same as when I racked...

    yeast nutrients and yeast hulls

I've only made 2 batches of cider so far, but I've added 1/2 tsp of DAP per gallon of must to some boiled water, then rehydrating the champagne yeast per the directions (when the water cools to about 100* F) in the same water. I pour it in and call it good. Both batches have had strong...

    checking cider alcohol content

I had no idea such a tool existed. Learn something new everyday.

    checking cider alcohol content

I thought it was all very strange too. I'm an "attention to detail" guy although I'm nowhere near perfect. All 12 bottles were at the same temp. I topped off my secondary and then started batch 2 in primary within a half an hour or so, and the temp was consistent. I used the same hydrometer...

    checking cider alcohol content

I know it can be estimated, that's why I ended my response with "you're just estimating." :) For what it's worth - speaking from my (limited) personal experience: I picked up 12 1/2 gallon bottle of store-bought juice to start my second batch and top off the secondary of my first batch...

    checking cider alcohol content

You would need to know the Original Gravity of the must before starting. No real way to know at this point. If the juice or cider you used is commercially produced, you could get some more and measure the gravity, but even then you're just estimating.

    First 4 batches update

No worries then, the stovetop pasteurization should take care of the concerns I mentioned. Ferment away and let us know how they turn out! I've considered trying a faster batch as well but my wife and I both prefer dry cider. I picked up a few gallon jugs, maybe I'll do some experimenting...

    First 4 batches update

I'm pretty new to cidermaking myself, but with a one week primary, you're going to want to let the ciders age in secondary for more than just 3-4 days. Depending on your yeast they might not be finished until they're well under 1.000. From what I've ready you want to let the fermentation finish...

Opening secondary to retrieve bung, reseal with carboy cap and purge o2?

I'll have to try one again, I carefully sanitized and filled the one I tired, it looked like it was going to pull all of the vodka in. Maybe I didn't give it enough time to reverse bubble? Update on the OP: I grabbed some Starsan, sanitized the pick, pulled the airlock and had the bung out in...

Opening secondary to retrieve bung, reseal with carboy cap and purge o2?

Thanks Mark, I do have a few s-shaped airlocks as well. I tried one briefly but it was sucking back as well. I also edited my original post to clarify my question.
