I made a starter tOday from a yeas that expired oct9th. It was whitelabs California. It was a peanut butter color at the top 1/4 inch. The rest was white. It smelled fine. Should it be alright?
Bottling a brew from 6/28/10 tonight...all sanitized...priming with 2/3 cup table sugar...

I harvested and washed my first batch of yeast last weekend.
My brew partner wanted to syphon straight off the cake into sterilized jars.
He didn't see the point in washing, and I didn't know what to tell him. What issues could he run into with his unwashed yeast?
I've never grown hops, but I've got experience gardening.
Was about to just pick a few varieties from freshhops when I thought I'd ask...
how do you pick the variety to grow?
i'm in nj zone 7.
