    Barleywine Recipe - Critique please!

There's only a couple bottles of this left (which I'll probably drink in the next month or so, since I'm about to do a cross-country move at the end of July and the amount of beer my wife is letting me move with is fairly limited (~4 cases). The beer turned out to be pretty sweet, which was...

*Pic* Someone confirm lacto infection here?

Since Maple Syrup is a bajillion percent sugar, it seems that very little flavor remains after the yeast have had their say. I've primed with it before and not only did it produce crappy carbonation, I didn't taste it all that much. I've read that fennugreek is more 'aunt jemima' than 'maple...

*Pic* Someone confirm lacto infection here?

Just a quick update. It's been about a year and 4 months since I bottled this batch. It has an interesting flavor, almost a sweet and sour maple flavor. It's hit or miss with people, they either hate it or absolutely love it. Brewing a simple pale ale this weekend, will use 2 TBSP of...

    S'More Beer?

Posting a quick update to the thread: The beer is now over a year old and it's interesting. It's not quite a smore, and VERY sweet, but good. Definitely a dessert beer. I think if it had more marshmallow taste (however the hell you get that...) and a little less chocolate it would be spot on.

Baltic Porter Recipe - Comments welcome

The beer turned out good (especially after a few months), but it's not anywhere close to the taste of Baltika #6. Next time I'll try the licorice, but I haven't been able to brew anything for the past few months due to being crazy busy.

Please critique my Kasteelbier Bruin-Brune Recipe

It turned out well, though probably could have used more boil time to increase the gravity. Doesn't taste like what I was going for, probably because it's not high enough alcohol. Haven't had a chance to brew in the last 6 months or so due to circumstances beyond my control.

Really? I thought the BMC commercials this year were boring as hell

    S'More Beer?

Weird! I'll have to snoop around Flat Earth Brewery's website (assuming they have one).

    S'More Beer?

Not yet, though my beer brewing has slowed to a trickle recently. This is on my way back burner, as there's a bunch of other things I want to brew and/or tweak beforehand. This was good, just not what I was expecting.

    Beer Boycott

The Goodwill is it's own odd business model. Our local one(s) are selling used clothing at only 25% less (maybe) than brand new stuff. A nice jacket is damn near $60 there, when it's maybe $80 new. I'm not sure when this changed, but I seem to recall being able to buy pretty much anything at...

Hmm... licorice could be what I'm looking for... I've got an almost full bottle of absinthe I might experiment with next time around...

Baltic Porter Recipe - Comments welcome

That's what I initially thought, but I have made a subsequent batch using Munich (and a little vienna) for the base and it still doesn't give it the taste I'm looking for. It's definitely a molasses type taste that I can't pin down. Thanks for the suggestion though, I noticed the base malt...

Baltic Porter Recipe - Comments welcome

I ended up using treacle during the priming stage and I think it gave it a somewhat metallic flavor. It's only now coming together a little better. It's good, but for the first few months it definitely had a metallic twang (probably from the metal can the treacle came in?). I still can't...

Generally, but it can also use ale yeast if it's cold conditioned. As I find using lager yeast a PITA temperature wide, I've gone with ale yeast and just keep it as cold as I can (low 60's).

Sub dark chocolate for cocoa powder?

It was not too bad, but drier and a little more bitter (from the cocoa powder) than I expected.
