    Brew Jacket

I have the PRO. As stated above the Pro both heats and cools for fermentation. It works well, and I like it. I use buckets for fermentation, and i find the bucket kind of a pain to get into and out of the jacket when to bucket is full. Having said that, I would buy another one if I had the need...

    Apple press, suggestions?

I built the whizbang press from pictures and info from the interwebs, but have not actually used it yet. It really is a straight forward construction. I used 2x6s i think. I did not go so far as to build the disposal grinder, but if you really are into cider, I think its an excellent way to go.

    Sauerkraut question

Possible downfall of simply adding water to your kraut is the dilution of the brine made from the salt and liquid from the cabbage. If the salinity gets to low, your kraut may get funky. Low salinity can lead to unwanted critters growing. Simple brine is 1 1/2T salt per quart of water. Top...
