    Oldest ice wine

So I moved in September and the previous owners were hoarders and left us a house full of mostly junk. Amongst the chaos I found a box with a niagara ice wine collection. All vintages from 1989-1992. So over the weekend we were celebrating announcing that our first born will be a boy according...

What did I cook this weekend.....

I took advantage of the fresh herbs and kale in the garden to make some kale minestrone with pistou. Started with some pancetta than the onions, leeks, carrots, celery followed by tomatoes, parmesan rind and a fresh herb bouquet. Finished with potatoes, cannellini beans, and kale. Recipe from...

should I do sour mash for Berliner weisse?

Pitched the WLP630 Sept. 12. Bottled January 2 to 4 volumes. 1.032 OG. So yeah I wouldn't call this a quick method. I have also done a version with us05 and wyeast 5335 lactobacillus pitched together with decent results but I preferred the white labs blend.

should I do sour mash for Berliner weisse?

I've used WLP630 and didn't do a sour Mash and had good results. I did a decoction Mash and no boil for the Berliner Weisse.

    Ideas for carbonator

Ya I think your right about that.... I also read that the pump has to be stainless if you plan to pump anything other than water and not get sick. One day I will have to clean it up and make some seltzer water though. I also might try to convert one.of the spare tanks to a mini keg for the beach

    Ideas for carbonator

So I picked up one of the units in the attached photo at a an auction on a whim. Grand total of $6.22. So did a quick Internet search and found out it is a seltzer water maker for fountain soda (yes I bought something I had no idea what is was but hey it was shiny and stainless steely) so I'm...

    Hard Root Beer recipe

Update: I used Lorann oils rootbeer extract and royal old fashion rootbeer extract and split my 2 gallons. The lorann oil one was very tasty. The royal one tasted not as good and experienced the particulate problem mentioned above and a ton of bottle sludge.

    Wild yeast beer style

Thanks everyone for the info. I have settled on a saison grain bill/hops as suggested. I will be splitting the batch into 5 separate 1 gallon jugs and doing the following; Saison yeast Wild yeast I Wild yeast II Wild yeast plus fruit addition (probably mango) Saison yeast with same fruit...

    Hard Root Beer recipe

I just started 2 gal of this last night. Added 2 Oz of caramel 120L (steeped for 20 minutes at 155f before adding the sugar and boiling) both jugs were bubbling away when I went to work this morning. :)

    my basement brewery (almost finished)

I checked out that rig. A similar machine runs about 1200 Canadian around here. Would you expect to be able to weld a coupling to a keg or brew pot with yours?

    Wild yeast beer style

I did just bottle my first saison. I threw the yeast cake away but I could probably culture up some from my bottles. I never considered saison but it does seem to be the perfect beer for wild yeast. I'll probably use 2 row instead of pilsner because I have it on hand. Thanks for the suggestion...

    my basement brewery (almost finished)

Can you recommend a tig setup for a beginner? I have limited welding experience from trade school but I'm proficient with a brazing torch as I'm a refrigeration pipe fitter by trade. I've been wanting to pick up tig welding for a while now but the options are endless and I don't want to waste my...

    my basement brewery (almost finished)

Did you build the sink/table? That's the setup I'm going for when I move to a bigger house. I'm sick of breaking my back washing stuff in the bathtub lol.

    Wild yeast beer style

So back at the end of Aug. 2015 I picked a whole pile of apples off of old trees on my in-laws farm. I took peels from apples in three different locations and put them in sterile jars with about 1 cup each of canned pasteurized apple juice. Shook the jars daily and at one week in all three were...
