Brewing with soft water (Water Softener)

I always use the bypass on my softener when brewing. My water is fairly hard but since I tend to do darker beers there isnt much of an issue. If I wanted to do lighter styles I would go with distilled or store bought water ( with known mineral profile ) and build it up with salts as needed.

Reason's for Bitter after taste in first home brew

Some beers need to be aged for a long time. I have found that certain hops need a long time to mellow ( Chinook etc ). What type of hops did you use and what was the AA% ?

    Stupid mistakes

NYC water is about as perfect as you will get for brewing. You might want to try brewing salts for certain styles as the CaCO3.

How long is it good for

Should be fine. What is your OG and FG? Waiting usually produces much better beer.

    Star San Disposal

It is good for septic systems as it adds phosphorus. It can also be good for your lawn, I would suggest brining it up to neutral pH and then spraying over your lawn. It helps develop the root system.

AHS Bavarian Hefeweizen -08 - Mini Mash

I just bottled a Barvarian Wheat that I made with Weihenstephan Weizen 3068. This yeast gives a nice , spicy character that you certainly will not get with US-05. I use either US-05 or Nottingham for my pale ales and they are great, but in a heffe you need to use the proper strain for flavor.
