Pacman Yeast from Rogue - Man can it eat some sugars

I was thinking of doing the same thing. After doing an IPA with Pacman and hitting around 83% attenuation, the dryness was a concern of mine as well. But I kind of like a dry finish and maybe it will work for a pumpkin ale. I'm thinking spices up front with a malty/brown sugar mid-taste...

    Mashing with Peanut Butter

Maybe a stupid question but what about using actual peanuts?

    Dogfish Head Punkin Ale?

According to the label it is brewed with pumpkin (obviously), brown sugar, allspice, cinnamon, and nutmeg at 7% abv and 28 ibu. I guess the grain bill is what is at question here. If I remember correctly, the punkin had a very strong spice aroma and taste and a lot of alcohol twinge in my...

    Safale US-05 Attenuation

Thanks. I figured it was around there but just wanted to make sure.

    Safale US-05 Attenuation

Does anybody know the attenuation on Safale US-05? I just brewed 2 batches using this yeast and I'm trying to figure out what my expected F.G. will be. I can't find a damn thing about this yeast on the internet. Thanks.

    Chocolate Porter

It's a topic of great debate and if you search you will find a whole thread dedicated to it. I think the general consensus is that stouts must have roasted barley. Porters do not have to.

    Chocolate Porter

Hmmm...well is there any way to figure out what the correct OG would be?

    Chocolate Porter

That's interesting. I was under the impression that cocoa powder contained no fermentable sugars.

    Chocolate Porter

It was at 73 I believe. I've been getting a consistently higher OG on my last three batches.

    Chocolate Porter

I just brewed this tonight. The O.G. was 1.080! I'm sitting here wondering what the hell happened. All I can think of is that the Munton's DME has a better yield than beersmith says. Either way, I'm kind of bummed. Either that or my hydrometer is busted.

    First Stout - Brown Sugar?

Can I do a mini-mash without the 2-row and just used the flaked barley?

    First Stout - Brown Sugar?

Thanks for the suggestions. I'm seeing a lot of stout recipes that have: .5lb Chocolate Malt .75lb Roasted Barley 1lb Flaked Barley I may just give that a shot.

    First Stout - Brown Sugar?

Well the grain bill for the dry stout would be: .5lb Chocolate malt .5lb Roasted Barley .5lb Flaked Barley Are you saying .5lb is too much flaked barley?

    First Stout - Brown Sugar?

Let me start off by saying that stouts are my favorite type of beer. I decided it was time to get one going so I could cozy up to a few of them when it starts to get cold. I ordered the following: 4lbs Light Dry Extract 3lbs Dark Dry Extract .5lbs Chocolate Malt 1lb Flaked Barley 1lb...

    Leftover Hefeweizen Yeast

Well I think I'll be going for a Dunkelweizen since by the time it's drinkable it will be a bit colder and I enjoy the maltiness in colder weather. Here is the recipe I'm going to use: 1lb Carapils 1lb Crystal Malt 60L 5lb Wheat DME 1lb Dark DME 1oz Tettnang (60 minutes) 1oz Tettnang...

    Leftover Hefeweizen Yeast

Well the recipe was this: .5lb Carapils Steeped for 30 minutes 1lb Light DME 6lbs Wheat LME 1oz Tettnanger Hops (60) minutes First and foremost, the color is way off. It's closer to a Dunkelweizen then a Hefe. Secondly, it really lacks the wheat body of a Hefe. It tastes a bit...

    Leftover Hefeweizen Yeast

I have a decent amount of WLP300 Hefeweizen yeast from a wash I did a few weeks ago. I'd like to use it on an upcoming batch. I'm not too pleased with how my first Hefeweizen came out so I'm looking for another recipe where I can use this yeast wash. Any extract recipe suggestions for the...

    Grain Dust?

I got an order from beer-wine.com for my American Pale Ale that I will be brewing next week. I got a pound of milled Crystal 60L from them and I can see through the bag that there is a considerable amount of what I can only describe as dust. I'm sure when I go to steep these grains that all...
