    Devil's Conclave by 18th Street Brewery. It's very good. Double milk stout w/ cocoa nibs, cinnamon and sea salt. Extremely flavorful and great mouthfeel.

    Oxygenating - Bad for hoppy beers?

    I ended up oxygenating this batch prior to pitching my yeast back when I brewed it a week ago. Fermentation took off and it still has a nice hoppy aroma coming out of the airlock.     We weren't able to find out much else about the barrels other than they are French oak with varying degrees of char/toast. I want to say that they were fresh, unused barrels tho.

    It's been over a month since I've brewed. I just bottled my last non-sour beer that was in a fermenter so I have nothing in the short-term pipeline at this point. I feel so empty inside. I should FINALLY be able to brew on Monday though. Planning on a Red Rye IPA w/ Nelson and Columbus.

    There we go! We had Foret du Centre light and medium toast, and Foret du Troncais medium. They were all very good, the differences on all 3 were very slight, but noticeable. At 17% abv, we were all in good shape after this sampling.

    Nope, not that one.. the beers I'm looking for are all made from the same wort.. so something post-fermentation/pre-bottling is very slightly altering these beers.

    Nope.. hint time.. This brewery does a lot of collaborations with a lot of different breweries, including one very popular one from NW Indiana.
