    Why do we say 3 weeks in keg?

    Forgive me for sounding noobish but... Carbonating aside, why do people recommend to leave a beer in keg for 3 weeks before consumption? I like to leave my brew in primary for 3 weeks in most cases. Why can't I just leave it (or secondary) for an additional 3 weeks, keg, force carb it...
