    No, oversparging. Herms fly sparge can allow the ph to drop to low in the mash and you extract tannins.

    No bag, I have a nice false bottom. Beer taste great, kegging an hazy ipa tonight, similar to a recipe I did in my herms. Looking forward. I think there is less bite, I believe I was over extracting with my herms.

    I should have said I use the hop stopper with recirculation, not whirlpooling with no issues.

    counterflow chiller - Stainless or Copper.

    I have both, copper chillzilla and stainless version. Copper definitely faster but I recirc to around 140 so the diff for me was not signafigant. If you go copper, I can sell you my old one, just sitting in my shelf.

    I whirlpool to 140, then into fermator. You can do with out it, just adjust your flow. I like to drop the wort temp below 140 to stop the hop action and also do whirlpool hops.

    Fits fine, I use both the original hand made versions (I ground the threads off an elbow) and the new factory made ones.

    10 ozs of dry hops on day 7 for my neipa, that's on top of 8oz in day 3. 10 g batch. Pushed co2 through the dump valve to limit o2 exposure. 10psi was way too much. Had foam coming out my tri on the lid and hop dust was blowing in the wind. All we are is hop dust in the wind.
