    Nope, wrong continent Another hint because this is indeed a difficult one. This is a high elevation city closer to the equator than Jacksonville FL, but still in the Northern Hemisphere

    I was actually unaware of this, I thought Carafa was just a Weyerman brand of dehusked/debittered black malt. Thanks!

    Have you tasted it and checked gravity both before and after the mysterious "second ferment"?

    Yep believe it or not I do remember ordering by mail and phone out of a paper catalogue, so I do understand that it was more difficult. My point was that hydrometers are not "shiny gizmos that imply unrealistic accuracy". Taking gravity readings is a good practice to have from the beginning...

    It isn't your filter. For one thing I, and several other local brewers use a similar filter with no issues, and as VikeMan has rightly pointed out carbon filters don't remove minerals.     I'm planning a munich dunkel with a bonkers "historical munich lagerbier" mash that includes doughing in at ambient temperature and letting the grain soak, then a protein rest, then a beta rest, then an alpha rest, then a mashout ... should be a fun, but long brew day

    Which beer needs to condition longer?

    I would brew the irish red first, IME they benefit from longer cold conditioning more than a nice light irish stout and they are more pleasing to look at when they are clear. But honestly I think either way would turn out fine.
