    Appreciate the clarification. I did not do anything to increase the OG, it wasn't until hours later I realized why the OG was low. It's in the fermentation vessel and I can only hope it turns out fine.

    Yes, I steeped the specialty grains for 30 minutes prior to the boil. Never heard of putting the grains into the fermentation vessel. So typically, all grains go into the lauter tun, you don't steep them before the boil?

    I used the WY1056. OG was 1.060 and final gravity was 1.014, so it came out at 6% ABV. I did oxygenate the beer when it was cooled in the kettle to the fermenation vessel. Aside from that, there was little to no oxygen caused by splashing. Air bubbles in the bottling, possibly.

    It was nearly 3 weeks in the fermentation vessel, from all indications fermentation was complete. Now the 5-gallons when taking into account the trub could be issue. I will have to see how this new batch comes out. Just bottled it last Saturday and will pop one open tomorrow.

    Trial and error right? It’s a learning process, guess I was misguided thinking I’d get a bigger fruit flavor from this hop. The beer is still good bit tweaking is necessary if I try this one again. Thanks for the suggestions.

    Wow, just read the statute in California, can brew up to 100 gallons per adult in the household. I'm good for 200 gallons this year and giving away as much as I can to friends.
