Why do most homebrewers make really hoppy beer?

High hopping rates cover brewing "short comings" and other mistakes... It was also popular with the Micros about, gee, 15-20 years ago, so it MUST still be relevant, right? :cross:

Hello from the Mississippi Gulf Coast

Depending on what you brewed and your techniques, 5 weeks might be all you need. Now on to all grain! :cross:

Had a Franziskaner weiss beer yesterday....

Yep love it. It's like a banana in a bottle. Really nice. To be fair, however, no one I know will touch it. Too intense for them. More for me! :cross:

    keggle wort chillers?

Shirron plate chiller, especially if you have a spigot on your keggle.

irish red recipe. will it work ?

These are sound suggestions as you only get the red color from MUCH darker malts than 120L. I use roasted barley in my reds and use a lower lov caramel for sweetness. Also, you might want to use a 60 min hop addition only as you don't want a bunch of hop flavor in an Irish Red. You can make...

What do you do for a living?

[BEAVIS&BUTTHEAD] Huh, huh huh, huh, huh huh, huh, huh, huuuuuh...[/BEAVIS&BUTTHEAD] Oh yeah, I'm the bottling line manager at Lazy Magnolia Brewing Company, Kiln, MS. I like to brew, work on 'finishing' my house, drink beer, and build things in general. :cross:

    No secondary- wheat beer

This all being said, I say wheat beer needs a minimum of 3 weeks to be drinkable and if you bottle from primary, I'd say 4 weeks to drink. And if you cold crash your beers, MAYBE 2 weeks, but that's really pushing it! :mug:

You might be a redneck if...

Uhm, he's gone. SHE should now be responsible for the household and she's not. But, I think that he knew this before he left and probably why he left. He is illustrating his decision to us all and we shall support him. He's also showing what a great guy he is and still taking down...

Naked City Imperial Rye on tap in Seattle!

I'm sure this was mentioned before, but one, I can't recall and two, I'm 'on my way', so what was the production capacity of that brewhouse? (i.e. how many barrels can you brew at a time with their mash/kettle config?) Just curious... :)

    Your Source of Bottles?

I run a bottling line at my brewery and get all the free bottles I want or need. They also come with beer in them... :cross: I actually prefer the 16 oz bottles (you get to drink a pint +/- the sediment) and bought two cases when I first started brewing. I keg mostly now and bottle the...

So I'm Making a kind of Odd IPA

It's all about what you want to stand out. A pound of malt in a five gallon batch can make a big difference, regardless of the type. At the previous amounts, you're at an American Wheat level. By reducing the wheat malt, you'll be using it to add body and head to your IPA and not contributing...

So I'm Making a kind of Odd IPA

Ok, here's what I'd adjust things to: 6lbs. 2-Row 3lbs. Wheat 1lb. Honey Malt 1lb. Caramel/Crystal 50-60L 4oz. Rauch If this isn't a 'wheat' beer, I'd not go over 1/3 of wheat as a base malt (excluding specialty). You simply don't need more than a pound of honey malt, unless you...
