    The only way to control the amount of alcohol is by limiting the amount of sugar. You can then calculate out the maximum alcohol that could be created assuming 100% attenuation. If you stop before that by refrigeration, and if the bottles don't warm up for too long, you probably would be...

    To give my opinion...go with force carbonation. Not only does it prevent bottle bombs with sodas, but as you mention you would be making some alcohol. How much? It all depends on what temperature, how much yeast and how active the yeast still is...but overall there's no way to know 100% for...

    Texas 90 deg faucet shanks and old 3" tower

    At least 2 of them are this: Micromatic 4329AS-3E-304 - Stainless Steel Elbow Shank Assembly [MM 4329AS-3E-304] Looking at my receipt they cost me $40 each. The other 2 I'm not sure about, they came with the extension and I would guess are probably chrome plated.

    Texas 90 deg faucet shanks and old 3" tower

    Here's a picture of the tower + extension (3 taps possible). The cap says Perlick, but I'm honestly not sure since I had purchased it with a small refrigerator. The shanks I was planning to sell separately, but if you'd like them included as pictured let me know.

    Pennsylvania Hop rhizomes

    I got my order yesterday. Very fast shipment and the rhizomes look great. I'll report back with activity but a couple of them are already sprouted and one I can see a small cone formed.
