    getting a stopper out from inside carboy

    coat hanger trick would not work for me, so i used some 10# insulated wire i had layin around, just wet the neck of the carboy before you give it that last yank, it'll keep ya from havin to pull so hard ya bop yourself in the face with the stopper ;)

    well, what are *u* looking to add? nutmeg? cinnamon? i dunno, just my opinion but i've yet to find a spiced beer i agree with, but then again, i gave up on em a long time ago *because* i couldnt seem to find one i ever liked.

    easier in that the darker beers can be more forgiving to a beginner in that they can cover up some slightly off tastes if little things go wrong, the lighter the beer the more likely you are to notice to weird flavors (if they occur) cuz its a more delicate tasting beer to begin with if...

    making a starter from a commercial beer

    just make sure you leave enough room for the krausen - the first two or three times i did a starter i made huge messes ;) now i do em up in a science flask (free from work) with a rubber stopper and a large blow-off tube into a smaller flask filled half way with water, often my airlock starts...

    my gramps makes his hard cider the real old fashioned way - open cider place in cellar with lid on hope that it doesn't get infected course, you get the best results with cider from the orchard, the type that hasn't been pasteurized (still got some goodies in it) I haven't done it...

    IIRC someone here bought something like that (to convert a carboy into a conical) and now uses it for something like a drying stand (or some other equally usefull but not-quite-designed-for purpose) edit: then again, i may be wrong as i dont see a stand in there, just a valve

    mold part deux

    I'd try to save it too, but then i'm cheap like that ;) i'd just rack it and hope you dont transfer any of that mold colony - whats the worst that can happen? a beer you thought was bad goes bad? oh well, might as well give it chance to prove its merits ;)

    What's up with the airlock?

    Jill, i know i have one 'primary' bucket that never quite seals properly, i now use it only to transfer water/liquor/wort, i couldn't find the problem but know that the lid isn't sealing effectively - so i'd suspect you've just got a bad bucket/lid combo. for $20 a carboy is good insurance...

    i still have one of those stashed somewhere in my parents attic, come and take it off my hands if you want it, that's about how highly i think of it that said, you can probably brew an ok beer with it, but if you're even somewhat serious about brewing a good beer you may as well just pony up...

    Comments on my Coffee Stout recipe

    looks great to me, i've done a couple in the past few weeks - all with recipes pretty close to that but using about 16 ounces of percolated coffee, around 6lbs extract and about the same grain bill - and i've been *very* happy with them all, so much in fact i brewed another batch last night...
