    Apfelwein with ginger...

Anyone have tips on this? I made a batch with Orange Blossom honey and was delicious. I want to make this same with ginger. Never used it in brewing... Any suggestions? fresh, candied, granulated, etc. Thanks for any replies! Candied would seem the most favorable, but please enlighten me...

    Help w/ Turkish Coffee Stout

I am in the secondary of my first Espresso Porter. I took the advice of an accomplished brewer and added 4 cups of whole bean coffee to the carboy after the initial clearing of the primary. He recommended that I crack, not grind, the beans. I did so and got a great acidic reaction for a few...

So many experienced brewers don't go 2ndary

One more question, if I may.... A year shelf life is okay for porter, correct? I'm leaving country for a year and am brewing this to come home to. They will be residing in a dark, 68 degree closet.

So many experienced brewers don't go 2ndary

It's a coffee porter. There's the standard 1/2" of goop on the bottom of my carboy. So, I was curious as to why the recipe I was following called for adding beans in 2ndry. Thank you, sir. *Crack 'em... that makes sense!

So many experienced brewers don't go 2ndary

Thanks. I'll siphon off... What is your reasoning for separating from the primary when adding coffee beans. Does the bottom trub affect the chemistry? ... or something similar? A personal preference? I'm obviously a newbie, but I have the basic malt, barley, hop thing down pat. The...

So many experienced brewers don't go 2ndary

The recipe I am following now calls for adding whole coffee beans in the secondary. If I were to follow the experienced brewers methodology, I would assume popping off my stopper/airlock, taking a hydrometer reading, adding coffee beans, and re-attach stopper/airlock. Am I trackin'? ...

    First Porter

I brewed my first porter, which consisted of brown sugar (1# for 5 gal.) After the cold break I took my first hydrometer reading which hit 1.056... which is great. I sampled the hydrometer jar brew and it was quite sweet. Is this normal? Sugar = sweet, I know. But it seemed a little over the...

Thanks, Justibone! Ironically, I am from Austin and lived less than ten minutes away. Didn't brew at the time. Now I live 4000 miles away

*needed* Extract Porter Recipe... with shelf life

I'm looking for a Porter, Stout, Barley Wine that can take a year of shelving. I need to brew soon and I don't have all grain capabilities, yet. I have until late January to get something bottled. I leave country for a year and want a good homebrew to come home to. Anybody got a good, beginner...
