How long/vigorous was your boil? If it was just 60 at a low boil, I would say that this is a lot of evaporation! Your boil does not have to be violent! Just enough to get the job done!

I just brewed a OG 1.120 RIS that I'm going to age a small portion on oak soaked in Cabernet. I'm kind of going for a Mikkeller black hole idea (they did a red wine oak aged version of this). hope it turns out!

Just an update, I unhooked the gas, bled the kegs and let them thaw. Then I put them back on gas, and allowed them to recarb. Beer is just fine! Looks like another RDWHAHB moment!

Every Fantome i've ever had has been nothing short of amazing! Strange ghost, piscilant (sp?) and chocolate are my favs!

BTW, Should I bleed the kegs to relieve the pressure or just let them thaw as is?

Amazing beer!!! I buy at least 4 every year to put away! I think the oldest I have right now is 2005. I have a 2009 private stock, but haven't tried it yet. Anyone out there that can give some thoughts on private stock?

I love 120! Its marketed wrong though. Not for hop heads, but for those of us who like malt malt malt!!! Yes, there is a ton of hops in this guy, but the malt and alcohol is the star here! To each there own, but I like it!

Great beer! Give it a year or 3 and its even better!!! Can't say this is meant to drink fresh. Dann, you should give it another try after it has some time! its hard to make a beer that is 15% and is good its first year!

How long ago did you brew it sometimes it need a few months (or even a year or so) to mellow out. However, my first beer was a brown ale that fermented at about 85 and tasted like banana bread! A year and a half later I still had 6 left that still tasted like banana, but it was much better than...

I'm also glad to see a brewery in Richmond that is making exciting beers. Not taking anything away from the others (Blue Mountain does a great job!), but its good to see Belgian styles 15 minutes from my house (that weren't brewed IN my house)!!!!
